Flourless Beet Brownies Recipe

Ingredients

  • 2 tbsp olive oil
  • 2 eggs
  • 1 cup unsweetened or regular cocoa powder
  • 1 tsp baking soda
  • 1 medium red beet, peeled and cut in 1/2in pieces
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract (optional)
  • 1 cup + 3 tbsp bittersweet or dark baking chocolate chips

Directions

  • Preheat the oven to 350F. Lightly grease an 8x8 pan with olive oil
  • Whisk cocoa powder and baking powder together and set aside
  • Make beet mixture: In a food processor, blend cooked beets with sugar and vanilla into a puree (Not watery)
  • Make chocolate mix: Melt 1 cup chocolate with 2 tbsp olive oil in microwave in 15-sec intervals, stirring until smooth
  • Add melted chocolate to beets mixture and blend. Then add 2 eggs and blend again. Add dry mix and combine.
  • Add mixture to pan and top with more chocolate chips
  • Bake for 25-30 min or until fudgy in center
  • Cool for 30 min., sprinkle flaky sea salt and enjoy
